    Butter: Tequila & Lime Butter

    List of Ingredients


    • 1/4 cup tequila
    • Peel of 1 lime
    • 1/2 cup butter, softened (no substitutes)


    Instructions


    1. Bring tequila and lime peel to a boil in a small saucepan over medium-high heat. Reduce heat and simmer 3 to 4 minutes, until tequila just evaporates. Transfer peel to a cutting board; cool and finely chop.

    2. With a rubber spatula, beat peel and butter in a bowl until well-combined. Transfer butter to a sheet of plastic wrap or waxed paper. Roll into an 8-inch log and refrigerate overnight. To serve, cut log crosswise into 1-inch slices.

      Good with grilled shrimp or fish.
