    Butter: Vanilla-Maple Butter

    List of Ingredients


    • 1 cup pure maple syrup
    • 1 vanilla bean, split vertically
    • 3/4 cup unsalted butter (1-1/2 sticks)
    • 1 tsp pure vanilla extract


    Instructions


    1. Pour the maple syrup into a medium saucepan. Add the vanilla bean, scraping the seeds from the bean into the syrup.

    2. Bring syrup to a boil over medium-high heat. Cook until a candy thermometer registers 240 degrees (soft-ball stage). This will take about 10 to 12 minutes. Remove the pan from the heat, and remove the vanilla bean. Stir in the butter in small pieces until it is completely melted. Add the vanilla extract.

    3. Whip the mixture with a large balloon whip or use an electric mixer (use the wooden paddle, if available), until the mixture becomes thick and creamy. (Make ahead and store in the refrigerator in an airtight container. Mixture will keep for at least 2 weeks in the refrigerator.)

      This is a great treat on pancakes, waffles, toast -- or as the filling for a cookie "sandwich."
