    Andouille-Sausage Dressing

    List of Ingredients


    • 2 Tbsp olive oil
    • 1 pound andouille sausage, finely chopped
    • 1 cup chopped onion
    • ½ cup chopped celery
    • ¼ cup chopped green bell pepper
    • ¼ cup chopped green onion
    • 4 cloves garlic, minced
    • 4 cups fresh breadcrumbs
    • 1 (14.5-ounce) can diced tomatoes, undrained
    • 1 (14.5-ounce) can chicken broth
    • 2 large eggs, lightly beaten
    • 2 Tbsp chopped fresh parsley
    • 1 tsp Creole seasoning


    Instructions


    1. Preheat oven to 400° F. Grease a 13x9x2-inch baking dish; set aside.

    2. In a large skillet, heat olive oil over medium heat. Add sausage, and cook for 3 to 4 minutes. Add onion, celery, bell pepper and green onion. Cook for 5 minutes, or until vegetables are tender. Add garlic and cook for 1 minute.

    3. In a large bowl, combine sausage mixture and remaining ingredients. Spoon mixture into prepared dish. Bake for 40 to 45 minutes.

      Makes 10 to 12 servings.
