Andouille-Sausage Dressing

List of Ingredients
- 2 Tbsp olive oil
- 1 pound andouille sausage, finely chopped
- 1 cup chopped onion
- ½ cup chopped celery
- ¼ cup chopped green bell pepper
- ¼ cup chopped green onion
- 4 cloves garlic, minced
- 4 cups fresh breadcrumbs
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 (14.5-ounce) can chicken broth
- 2 large eggs, lightly beaten
- 2 Tbsp chopped fresh parsley
- 1 tsp Creole seasoning
Instructions
- Preheat oven to 400° F. Grease a 13x9x2-inch baking dish; set aside.
- In a large skillet, heat olive oil over medium heat. Add sausage, and cook for 3 to 4 minutes. Add onion, celery, bell pepper and green onion. Cook for 5 minutes, or until vegetables are tender. Add garlic and cook for 1 minute.
- In a large bowl, combine sausage mixture and remaining ingredients. Spoon mixture into prepared dish. Bake for 40 to 45 minutes.
Makes 10 to 12 servings.
