    Beer Batter Shrimp Fritters

    List of Ingredients


    • 1 cup warm beer, of choice
    • 1 ¼ cups all-purpose flour
    • ½ teaspoon cayenne pepper
    • 1 teaspoon kosher salt
    • ½ teaspoon white pepper
    • 2 cups cleaned, deveined, and chopped shrimp
    • 1 tablespoon Creole seasoning
    • ½ cup sliced green onions
    • ¼ cup chopped parsley
    • ½ to 1 teaspoon minced garlic
    • Vegetable oil, for frying
    • Lemon wedges, for serving


    Instructions


    1. In a large bowl, mix the beer, flour, cayenne, salt, and pepper together. Set aside for 4 hours.

    2. Put the shrimp in a separate bowl and sprinkle with Creole seasoning. Cover and refrigerate until ready to add to batter.

    3. When you are ready to cook the fritters, mix the shrimp, green onions, parsley, and garlic into the batter.

    4. Heat oil, 2 inches deep, in a heavy skillet over medium-high heat until oil just starts to shimmer, about 375 degrees on a thermometer.

    5. Drop teaspoon-size spoonfuls into the hot oil and cook until golden brown on both sides. Remove from oil and drain on paper towel-lined plate. Serve hot with lemon wedges.


      Serves 4
