Beer Batter Shrimp Fritters

- 1 cup warm beer, of choice
- 1 ¼ cups all-purpose flour
- ½ teaspoon cayenne pepper
- 1 teaspoon kosher salt
- ½ teaspoon white pepper
- 2 cups cleaned, deveined, and chopped shrimp
- 1 tablespoon Creole seasoning
- ½ cup sliced green onions
- ¼ cup chopped parsley
- ½ to 1 teaspoon minced garlic
- Vegetable oil, for frying
- Lemon wedges, for serving
Instructions
- In a large bowl, mix the beer, flour, cayenne, salt, and pepper together. Set aside for 4 hours.
- Put the shrimp in a separate bowl and sprinkle with Creole seasoning. Cover and refrigerate until ready to add to batter.
- When you are ready to cook the fritters, mix the shrimp, green onions, parsley, and garlic into the batter.
- Heat oil, 2 inches deep, in a heavy skillet over medium-high heat until oil just starts to shimmer, about 375 degrees on a thermometer.
- Drop teaspoon-size spoonfuls into the hot oil and cook until golden brown on both sides. Remove from oil and drain on paper towel-lined plate. Serve hot with lemon wedges.
