Cajun Fried Frog Legs

- 16 frog legs, skinned and cleaned
- 3 tablespoons Creole seasoning, divided
- 3 eggs, beaten
- ½ cup milk
- ½ cup all-purpose flour, plus more for dusting
- ¼ cup yellow cornmeal
- 1 teaspoon kosher salt
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon cayenne pepper
- ¼ teaspoon black pepper
- ¼ teaspoon white pepper
- 1 cup canola or peanut oil
Instructions
- Rinse frog legs well and pat dry. Sprinkle 2 tablespoons Creole seasoning on the legs. In a glass bowl, mix the eggs and milk. In another bowl, combine flour, cornmeal, remaining Creole seasoning, salt, paprika, onion powder, garlic powder, cayenne, black, and white peppers.
- Take the seasoned frog legs and lightly coat with a dusting of flour. This helps the egg mixture stick to the legs. Dip the legs into egg mixture, then dredge in the seasoned flour mixture until the legs are fully coated.
- Heat oil in a large skillet and fry frog legs until golden brown, 6 to 8 minutes. Drain on paper towels and serve.
