    Catfish Gumbo

    List of Ingredients


    • 1/2 cup vegetable oil
    • 1/2 cup flour
    • 4 garlic cloves
    • 2 cups chopped onions
    • 1 cup chopped celery
    • 1 cup chopped green bell pepper
    • 5 cups chicken stock
    • 1/2 tsp cayenne pepper (or to taste)
    • Salt and pepper, to taste
    • 2 bay leaves
    • 1 lb. sliced, smoked sausage (Andouille or Kielbasa, whatever you have on hand)
    • 6 catfish fillets, cleaned and chopped
    • Hot pepper sauce (optional)


    Instructions


    1. Make a roux with the oil and flour, browning it slowly and stirring frequently. Cook over medium heat for about 30 minutes until it is a rich milk chocolate color (frequent stirring is a must). When the roux is just right, add the garlic, onions, celery, and green pepper, stirring vigorously. Cook 2 to 3 minutes. Lower heat (to low setting) and cook 15 to 20 minutes, stirring occasionally.

    2. Add the remaining ingredients and simmer for one hour or more. Stir occasionally.

    3. Taste for seasonings and add salt and pepper, if desired.

      Serve over hot cooked rice in soup bowls.

      Yield: 3 quarts
