    Crawfish Popcorn

    List of Ingredients


    • 1 cup yellow corn meal
    • 1 cup corn flour
    • 1 tsp cayenne pepper
    • 2 Tbsp Creole seasoning
    • 4 eggs
    • 1 lb. cooked crawfish tails, peeled, cleaned and deveined
    • 1 pint vegetable oil


    Instructions


    1. Combine corn meal, corn flour and seasonings. Beat eggs in a 2-quart mixing bowl and add crawfish tails.

    2. Meanwhile, heat the oil in a deep skillet until a drop of corn meal sizzles when placed into it.

    3. Toss tails in flour mixture until all are coated. Drop tails into oil a handful at a time, to avoid splattering. Fry until tails are golden brown, about 3 minutes.

      Serve with tartar or cocktail sauce, or on hot French bread as a sandwich.

      Makes 2 servings.
