Garlic Oysters

List of Ingredients
- 1 cup butter, divided
- ¼ cup garlic sauce
- 3 tablespoons minced garlic
- ¼ cup chopped parsley
- ½ teaspoon salt, plus extra
- Vegetable oil, for frying
- 2 cups finely ground cornmeal
- 2 tablespoons Creole seasoning
- 1 teaspoon freshly cracked pepper, plus extra
- 1 large egg
- ½ cup milk
- 24 freshly shucked oysters, reserving shells
- ½ cup freshly grated Parmesan cheese
- Green onions, sliced, for garnish
Instructions
- Place half the butter in a small saucepan over low to medium heat. Add garlic sauce, garlic, parsley, and salt. Cook for 5 minutes. Add remaining butter, cooking for additional 2 minutes. Remove from heat.
- Heat oil in deep fryer to 375 degrees.
- In a medium bowl, combine cornmeal, Creole seasoning, and pepper. In a separate bowl, whisk egg and milk together and season with salt and pepper, to taste.
- Right before frying, dip each oyster in egg wash, roll in cornmeal, dip in egg wash again, then in cornmeal, and immediately place in fryer. Fry until golden brown, about 2 minutes. Drain on paper towels.
- Place oysters back on shells and spoon a teaspoon of garlic butter over the oysters. Top with a pinch of Parmesan and green onion.
