    La Chair de Crabe a la Creole (Crabmeat St. Pierre)

    List of Ingredients


    • 1-1/2 lbs. crab meat
    • 1/4 stick (2 Tbsp) butter
    • 1/2 cup chopped green onions
    • 1/4 cup chopped green bell pepper
    • 1 cup peeled tomatoes
    • 1 clove minced garlic
    • 1 Tbsp chopped parsley
    • Salt and cayenne pepper to taste
    • 1/2 cup bread crumbs
    • 1/2 cup grated Swiss cheese


    Instructions


    1. Saute the crabmeat in butter only long enough to cook the meat. Add green onions, bell pepper, tomatoes, garlic and parsley. Season to taste and cook all ingredients until slightly thickened.

    2. Cover with a mixture of bread crumbs and grated cheese. Pass under the broiler and serve immediately.

      Serves 6 as an appetizer.
