    Leah Chase's Oyster Po-Boy

    Recipe Introduction

    "You ain't been to New Orleans till you've had an oyster po-boy,' says Leah Chase."

    List of Ingredients

    â—¦  2 thick French loaves
    â—¦  A little butter
    â—¦  4 dozen oysters, shelled
    â—¦  Cornmeal for dusting
    â—¦  Salt and freshly ground pepper
    â—¦  Oil for deep-frying
    â—¦  Tabasco sauce
    â—¦  Dill pickle (pickled gherkins), sliced

    Recipe

    Cut the loaves in half lengthways. Toast each half and spread with a little butter.

    Dust the oysters in cornmeal, salt and pepper, and deep-fry in hot oil for a few minutes.

    Make a sandwich with the toast and oysters; sprinkle with Tabasco sauce and sliced dill pickles.

    Serves 6
