    Louisiana Rice and Shrimp

    List of Ingredients


    • 2 Tbsp olive oil
    • 2 celery stalks, diced
    • 1 small onion, chopped
    • 1 green bell pepper (cored, seeded, and chopped)
    • 2 plum tomatoes, chopped
    • 2 tsp Old Bay seasoning
    • 1 tsp paprika
    • 1 tsp salt
    • 1/4 tsp pepper
    • 4 cups cooked rice
    • 1 lb. large shrimp, peeled and deveined
    • 2 Tbsp chopped parsley


    Instructions


    1. Saute celery, onion, and green pepper in oil in large pot for 5 minutes. Add tomatoes, Old Bay seasoning, paprika, salt and pepper, and 1 1/2 cups water. Simmer 5 minutes.

    2. Stir in rice; heat through. Add shrimp, cover and cook for 4 to 5 minutes until cooked through.

      Stir in parsley and serve with lemon wedges.

      Makes 4 servings.
