Louisiana Rice and Shrimp

List of Ingredients
- 2 Tbsp olive oil
- 2 celery stalks, diced
- 1 small onion, chopped
- 1 green bell pepper (cored, seeded, and chopped)
- 2 plum tomatoes, chopped
- 2 tsp Old Bay seasoning
- 1 tsp paprika
- 1 tsp salt
- 1/4 tsp pepper
- 4 cups cooked rice
- 1 lb. large shrimp, peeled and deveined
- 2 Tbsp chopped parsley
Instructions
- Saute celery, onion, and green pepper in oil in large pot for 5 minutes. Add tomatoes, Old Bay seasoning, paprika, salt and pepper, and 1 1/2 cups water. Simmer 5 minutes.
- Stir in rice; heat through. Add shrimp, cover and cook for 4 to 5 minutes until cooked through.
Stir in parsley and serve with lemon wedges.
Makes 4 servings.
