Mulate's Catfish Jambalaya

List of Ingredients
- 4 yellow onions, chopped
- 2 cloves garlic
- 1/2 bell pepper, chopped
- 1 stalk celery, chopped
- 1/2 lb. margarine
- 1 (10-ounce) can Ro-Tel tomatoes
- 4 ounces fresh mushrooms
- Salt and red pepper to taste
- 1 (8-ounce) catfish fillet
- .
- Accompaniment: Hot cooked rice
- Garnish: Freshly chopped onion tops
Instructions
- Put first 7 ingredients into saucepan and cook until mixture starts to turn light brown. Season with salt and red pepper while mixture is cooking.
- Add catfish and cook 15 to 20 minutes longer. Mix with hot cooked rice and freshly chopped onion tops. Serve hot.
Makes 6 to 8 servings.
