    Mulate's Catfish Jambalaya

    List of Ingredients


    • 4 yellow onions, chopped
    • 2 cloves garlic
    • 1/2 bell pepper, chopped
    • 1 stalk celery, chopped
    • 1/2 lb. margarine
    • 1 (10-ounce) can Ro-Tel tomatoes
    • 4 ounces fresh mushrooms
    • Salt and red pepper to taste
    • 1 (8-ounce) catfish fillet
    • .
    • Accompaniment: Hot cooked rice
    • Garnish: Freshly chopped onion tops


    Instructions


    1. Put first 7 ingredients into saucepan and cook until mixture starts to turn light brown. Season with salt and red pepper while mixture is cooking.

    2. Add catfish and cook 15 to 20 minutes longer. Mix with hot cooked rice and freshly chopped onion tops. Serve hot.

      Makes 6 to 8 servings.
