    Natchitoches Meat Pot Pie

    â—¦ 1 pound ground beef
    â—¦ 1 pound ground pork
    â—¦ 2 small yellow onions, diced
    â—¦ 2 celery stalks, diced
    â—¦ 1 green bell pepper, seeded, diced
    â—¦ 1 red bell pepper, seeded, diced
    â—¦ 2 medium jalapeños, seeded, diced
    â—¦ 2 cloves garlic, finely grated on a Microplane
    â—¦ 3 bay leaves
    â—¦ 1 ½ tablespoons Creole seasoning
    â—¦ 1 tablespoon all-purpose flour plus more for dusting
    â—¦ 1 teaspoon Worcestershire sauce
    â—¦ 6 plum tomatoes, diced
    â—¦ 1 cup beef broth
    â—¦ ¾ cup thinly sliced scallions
    â—¦ ½ cup chopped flat-leaf parsley
    â—¦ 2 sheets store-bought pie dough or 2 sheets frozen puff pastry (17.3-ounce package)
    â—¦ 1 large egg
    â—¦ Kosher salt

    Recipe

    Heat oven to 375° F.

    Heat oil in a large wide pot over medium-high heat. Add beef and pork and stir, breaking up with the back of a spoon, until golden brown and liquid is evaporated, about 12 minutes. Mix in onions, celery, bell peppers, and jalapeños and cook, stirring often, until vegetables are tender, about 10 minutes. Add garlic, bay leaves, Creole seasoning, flour, and Worcestershire sauce; cook, stirring occasionally, for 2 minutes. Add tomatoes and broth; bring to a boil. Reduce heat and simmer, stirring constantly, for 5 minutes. Stir in scallions and parsley and let filling cool completely.

    Remove bay leaf from filling; discard. Divide filling equally among ramekins. Roll out dough on a lightly floured surface and cut out into six 8-inch rounds. Whisk egg and 1 tablespoon water in a small bowl. Brush egg wash around edges of each ramekin; place dough rounds on top. Trim each dough round so it extends only ½ inch beyond surface of ramekin. Crimp dough over sides, pressing to adhere. Brush tops of dough with egg wash and cut three slits across the top with a paring knife. Sprinkle kosher salt over. Place ramekins on a rimmed baking sheet and bake until crusts are golden brown and fillings are bubbling, 35 to 40 minutes.
