    New Orleans Gumbo

    List of Ingredients


    • 2 tsp butter
    • 1/4 cup onions, peeled and chopped
    • 1 large clove garlic, chopped
    • 2-1/2 Tbsp fresh parsley, chopped
    • 3-3/4 ounces smoked sausage (mild or hot), cut into 1-inch pieces
    • 1 piece chicken thigh or wing
    • 1 quart chicken broth, heated
    • 1 tsp ground thyme
    • 1 small bay leaf
    • Few dashes of red pepper sauce
    • 3 ounces Okra, cut
    • 2-1/2 oz. boneless red snapper fillet
    • 1 tsp Gumbo File seasoning
    • 5 ounces King Crab legs, frozen and cut into 2- to 3-inch pieces
    • 5 ounces large shrimp, peeled
    • Hot cooked rice


    Instructions


    1. Heat butter in large pot over medium-high heat. Saute onion, garlic, and parsley until onions are transparent. Add sausage and brown. Add chicken and brown.

    2. Pour hot broth into pot. Add thyme, bay leaf, and red pepper sauce. Add okra and red snapper and bring to a boil. Add gumbo file and simmer for 20 to 30 minutes.

    3. Add crab leg pieces and boil for 5 minutes, no longer. Add shrimp and boil 5 minutes, no longer.

    4. If desired, thicken with flour whisked into water and strained, or cornstarch.

    5. Serve hot over rice in soup bowls.

      Serves 6
