    Shrimp Sauce Piquant

    List of Ingredients


    • 5 Tbsp butter
    • 2 Tbsp flour
    • 1 cup chopped onions
    • 4 green onions, chopped
    • 1 cup chopped celery
    • 4 cloves garlic, sliced
    • 2 cups tomato puree
    • 2 cups water
    • 1 bay leaf
    • 5 whole allspice, crushed
    • 5 cloves
    • dash of crushed red pepper
    • 1 Tbsp Worcestershire sauce
    • 1 slice lemon
    • 1 tsp crushed thyme
    • 2 Tbsp sugar
    • 1 tsp salt
    • 1 tsp hot pepper sauce (or to taste)
    • 2 (4-1/2-oz.) cans shrimp, or like amount of fresh shrimp

    • Hot cooked rice


    Instructions


    1. Make a roux with the flour and butter, by cooking and stirring frequently until golden brown.

    2. Add the chopped onions, celery, and garlic. Saute until vegetables begin to brown. Add tomato puree, water, and all remaining ingredients, except pepper sauce and shrimp. Bring mixture to a boil; reduce heat to low and simmer uncovered for about an hour (sauce will be reduced by about half), stirring frequently.

    3. If using canned shrimp, remove from heat and add pepper sauce and shrimp. If using fresh shrimp, add the shrimp and allow to cook for a few more minutes before removing from heat and adding pepper sauce.

      Serve over hot cooked rice.
