    List of Ingredients


    • 1 stick butter
    • 2 large onions, chopped
    • 1 bell pepper, chopped
    • 3 fresh tomatoes, sliced
    • 1 large eggplant, sliced 3/4-inch thick and soaked in cold salt water
    • 2 cloves garlic, mashed
    • 1 tsp salt
    • 1/2 tsp Tabasco sauce


    Instructions


    1. Melt butter over slow heat; saute onions and bell pepper. Add tomatoes and cook very slowly for about 20 minutes, stirring occasionally.

    2. Add eggplant, garlic, salt and hot sauce; cover and steam for about 30 minutes. Serve hot.

      Makes 6 to 8 servings.
