    • -- Glaze --
    • 1-1/2 cups confectioner's sugar
    • 4 tsp apple cider
    • 4 tsp bourbon
    • .
    • -- Cider-Glazed Apples --
    • 4 Tbsp butter or margarine, divided
    • 4 Golden Delicious apples, peeled, cored and sliced 1/2-inch thick, divided
    • 2 Granny Smith apples, peeled, cored and sliced 1/2-inch thick, divided
    • 2/3 cup apple cider, divided
    • 1/2 cup golden raisins, divided

    Instructions

    1. Heat oven to 325 degrees. Grease and flour a 12-cup bundt pan.

    2. Combine flour, cinnamon, ginger, baking powder, baking soda, salt, nutmeg and allspice in a medium bowl; set aside. Beat butter in a large mixer bowl until creamy. Add brown and granulated sugars. Beat 3 minutes, until light and fluffy. Beat in eggs, one at a time, until well blended. At low speed, alternately beat in flour mixture with apple cider, beginning and ending with flour mixture, until blended. Spoon batter into prepared pan; spread evenly.

    3. Bake one hour, or until a toothpick inserted in center of cake comes out clean. Cool cake in pan 20 minutes. Unmold onto a wire rack set over a sheet of waxed paper.

    4. Make glaze: Sift confectioner's sugar into a small bowl. Whisk in cider and bourbon until smooth. Spoon over top of warm cake, spreading to cover top and letting some glaze run down sides. Let cool.

    5. Make Cider-Glazed Apples: Melt 2 tablespoons of the butter in a large skillet over medium-high heat. Add 2 of the Golden Delicious and 1 of the Granny Smith apples. Cook 6 to 8 minutes, until softened. Add 1/3 cup of the cider and 1/4 cup of the raisins. Cook 1 to 2 minutes, until cider evaporates and apples are tender and glazed. Transfer to a bowl. Repeat with the remaining butter, apples, cider and raisins.

      Serve with cake.

      Makes 12 servings.
