Apple Cider Spice Cake

- 3 cups all-purpose flour
- 2 tsp cinnamon
- 2 tsp ginger
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1/2 tsp allspice
- 1 cup butter or margarine, softened
- 1 cup firmly packed dark brown sugar
- 1 cup granulated sugar
- 5 large eggs, at room temperature 20 to 30 minutes

- 1-1/2 cups confectioner's sugar
- 4 tsp apple cider
- 4 tsp bourbon

- 4 Tbsp butter or margarine, divided
- 4 Golden Delicious apples, peeled, cored and sliced 1/2-inch thick, divided
- 2 Granny Smith apples, peeled, cored and sliced 1/2-inch thick, divided
- 2/3 cup apple cider, divided
- 1/2 cup golden raisins, divided
Instructions
- Heat oven to 325 degrees. Grease and flour a 12-cup bundt pan.
- Combine flour, cinnamon, ginger, baking powder, baking soda, salt, nutmeg and allspice in a medium bowl; set aside. Beat butter in a large mixer bowl until creamy. Add brown and granulated sugars. Beat 3 minutes, until light and fluffy. Beat in eggs, one at a time, until well blended. At low speed, alternately beat in flour mixture with apple cider, beginning and ending with flour mixture, until blended. Spoon batter into prepared pan; spread evenly.
- Bake one hour, or until a toothpick inserted in center of cake comes out clean. Cool cake in pan 20 minutes. Unmold onto a wire rack set over a sheet of waxed paper.
- Make glaze: Sift confectioner's sugar into a small bowl. Whisk in cider and bourbon until smooth. Spoon over top of warm cake, spreading to cover top and letting some glaze run down sides. Let cool.
- Make Cider-Glazed Apples: Melt 2 tablespoons of the butter in a large skillet over medium-high heat. Add 2 of the Golden Delicious and 1 of the Granny Smith apples. Cook 6 to 8 minutes, until softened. Add 1/3 cup of the cider and 1/4 cup of the raisins. Cook 1 to 2 minutes, until cider evaporates and apples are tender and glazed. Transfer to a bowl. Repeat with the remaining butter, apples, cider and raisins.
Serve with cake.
Makes 12 servings.
