Coffee Cake: Apple Cream Coffee Cake

- 1/2 cup chopped walnuts
- 2 tsp cinnamon
- 1-1/2 cups sugar, divided
- 1/2 cup butter or margarine, softened
- 2 eggs
- 1 tsp vanilla
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup sour cream
- 1 apple, peeled, cored, and thinly sliced
Instructions
- Preheat oven to 375 degrees. Grease a springform pan well.
- Combine walnuts, cinnamon, and 1/2 cup sugar.
- In a large bowl, cream butter. Gradually add remaining sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla. Combine flour, baking powder, baking soda, and salt. Add to creamed mixture alternately with sour cream. Beat well.
- Spread half of the batter in prepared pan. Top with apple slices. Sprinkle with half of walnut mixture. Top with remaining batter. Sprinkle on remaining walnut mixture.
- Bake for 35 minutes or until done. Let stand for 30 minutes. Remove side of pan and cut into slices. Serve with whipped topping, if desired.
