    Banana Spice Cake

    List of Ingredients


    • ¾ cup butter
    • 2 cups granulated sugar
    • 3 large eggs
    • 1 tsp vanilla
    • 4 large bananas, mashed
    • 3 cups all-purpose flour
    • 2 tsp baking powder
    • ½ tsp salt
    • 1 tsp baking soda
    • 1 tsp ground cinnamon
    • 1 tsp ground allspice
    • 1 tsp ground nutmeg
    • ½ cup buttermilk
    • ¾ cup chopped pecans (optional; I prefer to mix the chopped pecans into the icing, rather than the cake batter)

    • Icing (recipe follows)
    • Confectioners' sugar


    Instructions


    1. Cream butter and sugar well. Add eggs, beating thoroughly after each addition. Beat in vanilla and bananas.

    2. Combine the flour, baking powder, salt, baking soda, cinnamon, allspice, and nutmeg in a separate bowl. Add the dry ingredients alternately with the buttermilk to the banana mixture. Beat until mixed together. Fold in chopped pecans, if desired.

    3. Grease and flour cake pans of choice -- either three 9-inch round cake pans or one 10- x 15-inch sheet cake pan. Pour batter into prepared pans and bake at 350° F until the cake starts to pull away from the pan. Test with a straw for doneness. (Takes a bit more than 30 minutes.) Cool before icing the cake. Put the icing between the cake layers and dust top of cake with confectioners' sugar. If making a sheet cake, put icing on top of cake omit dusting with confectioners' sugar.

      Serves 10 to 12

      ICING

      • 3 Tbsp butter
      • 2 Tbsp milk
      • ½ tsp vanilla
      • 1 Tbsp cane syrup
      • 1 (16-ounce) box confectioners' sugar

      Mix butter, milk, vanilla, cane syrup and confectioners' sugar together. Beat well until icing is smooth. If needed, more milk can be added to achieve the right consistency. (I stir the ¾ cup chopped pecans into the icing at this point and mix until well distributed.)
