Coffee Cake: Blueberry Coffee Cake II

- 1 cup butter
- 1-1/2 cups sugar
- 3 eggs
- 1 tsp vanilla extract
- 3 cups flour
- 2 tsp baking powder
- 1 (21-oz.) can blueberry pie filling

- 1/4 cup flour
- 1/4 cup sugar
- 2 Tbsp butter
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 350 degrees (F). Coat a 9x13-inch baking pan with nonstick spray. In a large bowl, beat butter and sugar until smooth. Add eggs one at a time and beat well. Beat in vanilla.
- In another bowl, combine flour and baking powder. Add to butter mixture and beat until just combined. Spread half of the batter in the prepared pan, cover evenly with pie filling, and spread the remaining batter on top of the pie filling.
- Mix topping ingredients together with a fork until crumbly and sprinkle over batter. Bake 55 to 60 minutes, until toothpick inserted in center comes out clean. Cool on a wire rack.
Makes 16 servings.
