    Chai Spice Cake

    List of Ingredients


    • 1 cup brewed Chai tea
    • 1 cup unsalted butter
    • 1-1/2 cups white sugar
    • 1/2 cup brown sugar
    • 4 eggs
    • 2 tsp pure vanilla
    • 3/8 tsp salt
    • 1/2 tsp baking soda
    • 1/4 tsp ginger
    • 1 Tbsp cinnamon
    • 1/8 tsp nutmeg
    • 1/2 tsp clove powder
    • 1/8 tsp mace
    • 1/4 tsp allspice
    • 3 cups all-purpose flour
    • .
    • -- Glaze --
    • 1 cup confectioner's sugar
    • 2 Tbsp (to taste) Chai tea
    • 1/4 tsp tangerine or orange oil


    Instructions


    1. For the Chai tea, steep 3 to 4 tea bags in 1 cup of water, or brew one strong cup of Chai tea leaves. Cool.

    2. Generously spray a 9-inch springform pan with nonstick cooking spray. (You may also use a 9-inch angel food pan.) Preheat oven to 350 degrees (F).

    3. In a mixing bowl, cream the butter with the white and brown sugars. Add the eggs and vanilla, then all of the dry ingredients. While mixing, pour in Chai tea. Scrape bowl and blend well.

    4. Spoon batter into prepared pan and place pan on baking sheet. Place cake in the preheated oven and bake until cake tests done -- 45 to 55 minutes. Cool well.

    5. Mix the glaze ingredients together with a small whisk. Drizzle over the cool cake. Re-glaze.

      Garnish with shreds of orange zest.
