    Coffee Cake: Cherry Swirl Coffee Cake

    List of Ingredients


    • 1-1/2 cups sugar
    • 1/2 cup butter
    • 1/2 cup shortening
    • 1/2 tsp baking powder
    • 1 tsp vanilla
    • 1 tsp almond extract
    • 4 eggs
    • 3 cups flour
    • 1 can (21-oz.) cherry pie filling
    • *
    • -- Glaze --
    • 1 cup confectioners' sugar
    • 1 to 2 Tbsp milk


    Instructions


    1. In a mixing bowl, blend the first seven ingredients on low speed. Increase to high speed and whip for 3 minutes. Stir in flour.

    2. Spread two-thirds of the batter over the bottom of a greased 15-1/2 x 10-1/2-inch jelly roll pan. Spread pie filling over batter; drop remaining batter by tablespoonfuls over all.

    3. Bake at 350 degrees for 40 minutes or until golden.

    4. Meanwhile, combine glaze ingredients. Drizzle over cake while warm.

      Cake is best if served immediately.
