    Cream Sherry Cake

    List of Ingredients


    • -- For the Cake --
    • 1 (18.25-oz.) pkg. yellow cake mix
    • 1 (3.4-oz.) pkg. vanilla instant pudding mix
    • 4 large eggs
    • 1/2 cup vegetable oil
    • 3/4 cup cream sherry
    • Powdered sugar
    • *
    • -- For the Berries & Wine --
    • 2 cups dry red wine (such as Zinfandel)
    • 1 tsp fresh lemon juice
    • 1/4 cup sugar
    • 2 cups fresh strawberries
    • 1 cup fresh raspberries
    • 1 cup fresh blueberries
    • 1 cup fresh blackberries


    Instructions


    1. Cake Preparation: Beat cake mix and next 4 ingredients at medium speed with an electric mixer 2 minutes. Pour batter into a greased and floured 10-inch tube pan. Bake at 350 degrees for 45 to 50 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on wire rack 10 minutes; remove from pan, and cool on a wire rack. Sprinkle with powdered sugar and serve with Berries & Wine.

    2. To make the Berries & Wine: Stir together the first 3 ingredients. Add remaining ingredients; let stand at room temperature for 1 hour.

      Chill 30 minutes before serving.

      Serve with Cream Sherry Cake.
