    Cupcakes: Buttermilk Chocolate Cupcakes

    • ½ cup butter, softened
    • 1½ cups sugar
    • 2 eggs
    • 1 tsp vanilla extract
    • 1½ cups all-purpose flour
    • ½ cup cocoa
    • 1 tsp baking soda
    • ¼ tsp salt
    • ½ cup buttermilk
    • ½ cup water
    • .
    • -- Frosting --
    • ½ cup butter, softened
    • 3¾ cups confectioners' sugar
    • 2 squares (1 ounce each) unsweetened chocolate, melted
    • 2 Tbsp evaporated milk
    • 1 tsp vanilla extract
    • ¼ tsp salt
    • .
    • Chocolate sprinkles


    Instructions


    1. In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, cocoa, baking soda and salt. Add dry ingredients to creamed mixture alternately with buttermilk mixture.

    2. Fill paper-lined muffin cups two-thirds full. Bake at 375° F for 15 to 20 minutes, or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

    3. For frosting:
      In a small mixing bowl, beat butter and confectioners' sugar. Beat in melted chocolate, milk, vanilla and salt. Frost cupcakes; garnish with chocolate sprinkles.

      Yield: 2 dozen
