Cupcakes: Buttermilk Chocolate Cupcakes

- ½ cup butter, softened
- 1½ cups sugar
- 2 eggs
- 1 tsp vanilla extract
- 1½ cups all-purpose flour
- ½ cup cocoa
- 1 tsp baking soda
- ¼ tsp salt
- ½ cup buttermilk
- ½ cup water

- ½ cup butter, softened
- 3¾ cups confectioners' sugar
- 2 squares (1 ounce each) unsweetened chocolate, melted
- 2 Tbsp evaporated milk
- 1 tsp vanilla extract
- ¼ tsp salt

- Chocolate sprinkles
Instructions
- In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, cocoa, baking soda and salt. Add dry ingredients to creamed mixture alternately with buttermilk mixture.
- Fill paper-lined muffin cups two-thirds full. Bake at 375° F for 15 to 20 minutes, or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
- For frosting:
In a small mixing bowl, beat butter and confectioners' sugar. Beat in melted chocolate, milk, vanilla and salt. Frost cupcakes; garnish with chocolate sprinkles.
