Cupcakes: Chocolate Cupcakes

- ¼ cup vegetable oil
- ¾ cup sugar
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/8 tsp salt
- 2/3 cup buttermilk
- Marshmallow-Crème Icing (recipe follows)
- Garnish: coarse sugar
Instructions
- Preheat oven to 350° F. Line a 12-cup muffin pan with paper liners.
- In a large bowl, beat oil, sugar, egg and vanilla with an electric mixer at medium speed until smooth. In another bowl, sift together flour, cocoa, baking soda and salt. Add dry ingredients alternately with buttermilk to oil mixture. Beat at lowest speed with an electric mixer, being careful not to overmix. Divide batter evenly among prepared muffin cups.
- Bake for 20 to 25 minutes, or until a wooden pick inserted near center comes out clean. Cool for 10 minutes in pan. Remove cupcakes from pan and let cool completely on wire racks. Frost cooled cupcakes with Marshmallow-Crème Icing. Garnish with coarse sugar.
Makes 12 cups.

Marshmallow-Crème Icing:
• ½ cup butter, softened
• 1½ cups confectioners' sugar
• 1 (7-ounce) jar marshmallow crème
• ½ tsp vanilla extract
In a mixing bowl, beat all ingredients at medium speed with an electric mixer until light and fluffy.
Makes about 2 cups.
