    Fall Spice Cake

    List of Ingredients


    • 1-3/4 cups flour
    • 1/2 tsp baking powder
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 1 tsp ground cloves
    • 1/2 tsp ground nutmeg
    • 1 tsp ground cinnamon
    • 1-1/2 sticks butter, room temperature
    • 3/4 cup sugar
    • 3/4 cup brown sugar
    • 3 eggs
    • 3/4 cup buttermilk
    • 1 tsp vanilla
    • 1 cup chopped pecans


    Instructions


    1. Preheat oven to 375° F. Grease and lightly flour a 9- x 13-inch pan.

    2. Sift together the dry ingredients. Cream the butter and sugars. Add the eggs, one at a time, beating after each addition. Add the dry ingredients alternately with the buttermilk. Add the vanilla and pecans, and blend.

    3. Bake 35 to 40 minutes.

      When cool, frost with:

      CARAMEL ICING

      • 1 stick unsalted butter
      • 1/2 cup brown sugar
      • 2 Tbsp evaporated milk
      • 1 cup confectioners' sugar

      In a saucepan, combine the butter and brown sugar. Cook over low flame for 3 minutes, stirring constantly. Gradually add the milk. Bring to a boil. Remove from the heat and cool.

      Add the confectioners' sugar and beat. (If it's too thick, add 1 teaspoon milk.)
