German Apple Cake

- 2 eggs
- 2 cups sugar
- 2 cups flour
- 2 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- 4 cups grated apples, medium grate (about 3 large, firm apples, such as Golden Delicious or Granny Smith)
- 1/2 cup chopped walnuts

- 2 pkgs. (3 oz. each) cream cheese, softened
- 1 Tbsp butter, melted
- 1 tsp vanilla extract
- 1-1/2 cups sifted confectioners' sugar
Instructions
- Preheat oven to 350 degrees. Lightly grease a 9x13-inch baking pan.
- Beat eggs in a large mixing bowl until light and foamy; then add sugar, flour, cinnamon, baking soda, salt, and vanilla. Stir until well blended (dough will appear dry), then add apples and any juice that accumulates during grating. Mix well and add walnuts.
- Pour into prepared baking pan and bake until cake shrinks from side of pan and toothpick inserted into center comes out clean, 35 to 40 minutes. Cool on wire rack.
- To make the icing: Beat cream cheese, butter, and vanilla with a wire whisk or electric mixer until smooth and fluffy. Add confectioners' sugar a little at a time, until all is incorporated and icing is smooth.
- Ice the cake, cut into slices, and enjoy.
Makes 12 servings.
