    Irish Whiskey Cake

    • 1 cup golden raisins
    • 1/3 cup Irish whiskey
    • Vegetable cooking spray
    • 1-3/4 cups sifted flour
    • 3/4 tsp baking soda
    • 1 tsp baking powder
    • 1/2 tsp ground nutmeg
    • 3 large eggs, separated
    • 1/8 tsp salt
    • 1 cup (2 sticks) unsalted butter, softened
    • 1 cup granulated sugar
    • Grated zest of 1 large orange
    • 1 cup lowfat plain yogurt
    • 1/2 tsp vanilla extract
    • .

    • 1 cup powdered sugar
    • 2 Tbsp orange juice
    • 2 Tbsp Irish whiskey
    • .
    • Sweetened whipped cream or vanilla ice cream


    Instructions


    1. Soak the golden raisins in the Irish whiskey in a covered bowl overnight. Drain, reserving the raisins and whiskey separately.

    2. Spray a 10-inch tube pan with vegetable cooking spray. Line the bottom with a circle of wax paper and spray again. Combine the sifted flour, soda, baking powder and nutmeg; set aside. Separate the eggs. With an electric mixer, beat the whites with the salt until stiff but not dry. Transfer to another bowl and set aside. Put the softened butter and sugar into the bowl of the mixer (it is not necessary to wash first). Beat until creamy and lightened in color; beat in the orange zest. Add the reserved whiskey, egg yolks, yogurt and vanilla. Beat 2 minutes, scraping down the sides of the bowl.

    3. Mix a tablespoon of the flour mixture into the raisins. Slowly beat the flour into the sugar mixture; beat 1 minute. Beat in the raisins. Fold the beaten egg whites into the batter.

    4. Transfer to the prepared pan and bake in a preheated 350-degree (F) oven 40 minutes, or until the cake tests done. Let cool in the pan 5 minutes before unmolding onto a rack. Cool completely.

    5. For the icing: Combine the powdered sugar, orange juice and Irish whiskey; the mixture will be runny. Place the cake on a cake platter and spoon the icing over the top so that it runs down the sides of the cake. Let set up.

      Serve with sweetened whipped cream flavored with Irish whiskey or vanilla ice cream.

      Makes 12 servings.
