Cowgirl's Lemon Poppy Seed Pound Cake

- 3 cups all-purpose flour
- 2 cups sugar
- 1/4 cup poppy seeds
- 2 sticks sweet cream butter, softened to room temperature
- 1 cup buttermilk
- 4 eggs
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 4 tsp grated fresh lemon rind
- 1/2 tsp vanilla extract

- 1 cup confectioners' sugar
- 1 to 2 Tbsp fresh lemon juice
Instructions
- Preheat oven to 325 degrees. In a large mixing bowl, combine all cake ingredients. Beat on low speed, scraping bowl often, until all ingredients are moistened. Beat on high speed, scraping bowl often, until smooth, about 1 to 2 minutes.
- Pour into a greased and floured 12-cup bundt pan or 10-inch tube pan. Bake for 55 to 65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes and remove from pan. Cool completely.
- In a small bowl, stir sugar and lemon juice until smooth. Drizzle over cake.
