    Cowgirl's Lemon Poppy Seed Pound Cake

    List of Ingredients


    • 3 cups all-purpose flour
    • 2 cups sugar
    • 1/4 cup poppy seeds
    • 2 sticks sweet cream butter, softened to room temperature
    • 1 cup buttermilk
    • 4 eggs
    • 1/2 tsp baking soda
    • 1/2 tsp baking powder
    • 1/2 tsp salt
    • 4 tsp grated fresh lemon rind
    • 1/2 tsp vanilla extract
    • *

    • 1 cup confectioners' sugar
    • 1 to 2 Tbsp fresh lemon juice


    Instructions


    1. Preheat oven to 325 degrees. In a large mixing bowl, combine all cake ingredients. Beat on low speed, scraping bowl often, until all ingredients are moistened. Beat on high speed, scraping bowl often, until smooth, about 1 to 2 minutes.

    2. Pour into a greased and floured 12-cup bundt pan or 10-inch tube pan. Bake for 55 to 65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes and remove from pan. Cool completely.

    3. In a small bowl, stir sugar and lemon juice until smooth. Drizzle over cake.

      Makes 8 to 10 servings.
