    Peach Rum Pudding Cake

    List of Ingredients


    • 2 cups unbleached white flour
    • 2 tsp baking powder
    • 1/2 tsp salt
    • 1 tsp cinnamon
    • 1/2 tsp allspice
    • 2 eggs
    • 1 cup brown sugar, firmly packed into measuring cup
    • 1/2 tsp vanilla extract
    • 2 Tbsp rum
    • 2 Tbsp melted butter
    • 2-1/2 cups fresh peach slices

    • 1/2 pint heavy cream
    • 2 Tbsp rum
    • 3 Tbsp sifted confectioners' sugar


    Instructions


    1. Preheat oven to 350 degrees (F). Grease a 9x13-inch pan.

    2. Sift together flour, baking powder, salt and spices into a mixing bowl. In a separate bowl, beat together eggs and brown sugar. Use an electric mixer and beat well at high speed for several minutes.

    3. Beat vanilla, rum and melted butter into sugar and egg mixture. Stir wet ingredients into the flour mixture. Add peaches. Use a wooden spoon, and try to combine everything well with just a few swift strokes.

    4. Spread the mixture into the buttered 9x13-inch pan. Bake 35 minutes at 350 degrees (F).

    5. Whip the heavy cream, sprinkling in rum and confectioners' sugar. Serve pudding cake hot or warm, in squares, laced with topping.
