    • 2-3/4 cups cake flour
    • 2-1/2 tsp baking powder
    • 2 cups white sugar
    • 1 (3-oz.) pkg. strawberry-flavored gelatin
    • 1 cup butter, softened
    • 4 eggs
    • 1 cup milk
    • 1 tsp vanilla extract
    • 1/2 cup strawberries, pureed
    • *
    • -- For the Filling --
    • 1-1/2 cups heavy whipping cream
    • 2 Tbsp white sugar
    • 1/2 tsp vanilla extract
    • *
    • 1-1/2 cups sliced fresh strawberries
    • 1-1/2 cups strawberries, quartered
    • 1 recipe Cream Cheese Frosting


    Instructions


    1. Preheat oven to 350 degrees (F). Grease and flour three (9-inch) round cake pans.

    2. Mix flour and baking powder together; set aside. In a large bowl, beat sugar, gelatin, and butter until fluffy. Add eggs one at a time, beating well with each addition. Beat in flour and milk alternately. Fold in the 1 teaspoon vanilla and the pureed strawberries. Divide batter equally into the three 9-inch round cake pans.

    3. Bake at 350 degrees for 25 minutes or until a toothpick inserted into cake comes out clean. Cool for 10 minutes in the pans, then remove from pans and cool completely.

    4. To make the filling, beat whipping cream, sugar, and vanilla on HIGH until stiff. Fill each layer with 1/3 of the whipping cream and 3/4 cup of the sliced strawberries.

    5. Frost sides of cake with Cream Cheese Frosting. Pipe an edge of frosting around cake top. Spread remaining whipped cream on cake top; garnish with quartered strawberries.
