    Thelma's Devil's Food Sheet Cake

    List of Ingredients


    • 2½ cups unsifted flour
    • 2½ cups sugar
    • ½ cup cocoa
    • ½ tsp salt
    • 1 cup shortening (not oil or butter)
    • 1 cup buttermilk
    • 1 tsp vanilla
    • 2 tsp baking soda mixed into 1 cup boiling water
    • Chocolate Icing (recipe follows)


    Instructions


    1. Preheat oven to 350° F (325° if using a dark-coated or glass pan).

    2. In a large bowl, mix flour, sugar, cocoa and salt. Add shortening and slowly blend with mixer on low speed until crumbly. When well blended, add eggs, buttermilk and vanilla. Mix until just blended, then slowly add the boiling water/soda mixture; beat well. (Batter will be somewhat thin.) Pour into a greased and floured baking pan. This recipe will fill a 17- x 11-inch roasting pan. If you use a 9- x 13-inch pan, you will have about a cup of excess batter, which you could bake in a muffin tin.

    3. Bake for about 40 minutes, then begin checking for doneness with toothpick.

      CHOCOLATE ICING

      • 2 cups sugar
      • ½ cup milk
      • ½ cup cocoa
      • ½ cup butter or margarine (1 stick)
      • 1 tsp vanilla
      • 1 cup pecans

      Bring sugar, milk, cocoa and butter to a boil in a large pan. Boil to soft-ball stage, then boil 1 minute longer.
      Remove from heat and mix in vanilla and pecans by hand. Spread over hot cake. Icing will thicken as it cools.
