Coffee Cake: Very Berry Coffee Cake

- 1-1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, at room temperature
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1/4 cup sour cream
- 1/3 cup milk
- 2-1/2 cups (one 12-oz. pkg.) frozen mixed berries, thawed

- 1/3 cup unsalted butter, at room temperature
- 1/2 cup sugar
- 3/4 cup all-purpose flour
- 1/2 tsp cinnamon
Instructions
- Preheat the oven to 350 degrees (F). In a medium bowl, sift together flour, baking powder and salt. In a large bowl with an electric mixer, cream together butter and sugar until light. Add eggs, one at a time, beating after each addition. Add vanilla and sour cream and mix well. Alternately add flour mixture and milk until all ingredients are incorporated and mixed well.
- Grease and flour a 9-inch square cake pan. Spread half of the batter into the pan and smooth top. Cover batter evenly with the berries. Cover berries with the remaining batter and smooth top with rubber scraper.
- Prepare the crumb topping: In a medium bowl, combine all topping ingredients and pinch them together with your fingers to blend into crumbly mixture. Spread the crumbs evenly over the top of the cake.
- Place in oven and bake for 30 to 35 minutes, or until a toothpick inserted in center comes out clean and top of cake is golden brown.
Cool cake for a few minutes, then cut into squares and serve warm with lightly sweetened whipped cream.
