    Loaded Steak Fries

    Recipe Introduction

    "My sister, Felicia, would eat potatoes every meal if she could. When she was about 10 years old, she went through a six-month phase of eating them for breakfast, lunch, and dinner. These loaded steak fries are just as good as loaded baked potatoes. I always make them for Felicia when she camps with us."

    List of Ingredients

    â—¦ 4 potatoes, preferably Yukon or russet, washed and cut into ¼-inch wedges
    â—¦ 3 tablespoons vegetable oil, divided
    â—¦ 1 teaspoon paprika
    â—¦ 1 teaspoon seasoning salt (such as Alpine Touch)
    â—¦ 1 cup shredded Cheddar cheese or Mexican-style cheese blend
    â—¦ Sour cream
    â—¦ 1 tablespoon chopped fresh chives or dehydrated chives

    Recipe

    Put the potatoes in a large bowl and cover with cold water. Soak for 10 minutes, drain, and rinse. Pat them dry and return to the bowl. Preheat the skillet over medium heat for 1 to 2 minutes. Heat 1 tablespoon of oil for 1 to 2 minutes, until hot.

    Toss the potatoes with the remaining 2 tablespoons of oil, paprika, and seasoning salt. Add the potatoes to the pan. Cook, stirring every few minutes, for 15 to 20 minutes. If the potatoes start to stick, add more oil.

    Remove from the heat and pat dry any excess oil with a paper towel. Top the potatoes with the cheese, sour cream, and chives.

    Serves 4 to 6
