    Maple-Apple Pork Chops

    Recipe Introduction

    "This meal is great for fall, when apples are in season. Aim for an internal temperature of 145° F for the pork, and make sure to rest the meat for three to five minutes before eating it."

    List of Ingredients

    â—¦ 2 tablespoons olive oil
    â—¦ 35 butter crackers (one sleeve; such as Ritz), crushed
    â—¦ 1 teaspoon seasoning salt (such as Alpine Touch)
    â—¦ 1 egg
    â—¦ 4 (4-ounce) boneless pork chops
    â—¦ 2 tablespoons apple cider vinegar
    â—¦ 2 tablespoons maple syrup
    â—¦ 1 teaspoon Dijon mustard
    â—¦ Salt
    â—¦ Freshly ground black pepper
    â—¦ 1 yellow onion, sliced
    â—¦ 2 green apples, cored and thinly sliced
    â—¦ ¼ to ½ cup water (optional)

    Recipe

    Preheat the skillet over medium heat for 1 to 2 minutes. Heat the oil for 2 to 3 minutes, until hot.

    In a shallow bowl, mix together the crackers and seasoning salt. In a separate bowl, beat the egg. Dip the pork chops in the egg and dredge in the cracker mixture until completely covered. Set aside on a plate.

    Place the pork chops in the pan. Cook each side for 3 to 5 minutes, or until the breading is crispy but the meat is still undercooked.

    In a small bowl, mix together the vinegar, maple syrup, mustard, and salt and pepper to taste. Once both sides of the pork are cooked, add the onion and apples. Pour the maple syrup mixture over the top and cover.

    Cook for an additional 10 to 15 minutes.
    If the pork chops start to stick or burn, add the water a little at a time. Remove from the heat and serve hot.

    Serves 4



    Tip:
    • You can cut the onions at home and store in the cooler until you're ready to cook. You can also cut and peel the apples at home; add 1 tablespoon lemon juice to prevent browning.
