    Nutty Salted Caramel Popcorn

    Recipe Introduction

    "Making caramel popcorn is much easier than you think, and the Dutch oven is the perfect vessel for it. You just melt butter and brown sugar into a syrupy caramel sauce, then toss in popcorn and peanuts. The kosher salt and salty peanuts balance the sweetness of the caramel."

    List of Ingredients

    â—¦ 1 cup (2 sticks) unsalted butter
    â—¦ 1 ¼ cups brown sugar
    â—¦ ½ cup corn syrup
    â—¦ ½ teaspoon kosher salt
    â—¦ 6 cups popped popcorn
    â—¦ ½ cup chopped salted peanuts

    Recipe

    Place the Dutch oven over a bed of 15 hot coals.

    Add the butter, brown sugar, corn syrup, and salt, and cook. Stir until the butter melts and the mixture thickens and darkens a bit.

    Remove the Dutch oven from the heat and stir in the popcorn and peanuts until well coated. Transfer the mixture in heaping spoonfuls to wax paper and let cool before serving.

    Serves 6
