    White Bean Stew

    List of Ingredients


    • 2 Tbsp olive oil
    • 2 cloves garlic, chopped
    • 1 medium red onion, chopped
    • 2 large tomatoes, chopped
    • 1 (15-ounce) can white beans (such as cannellini, great northern or navy), drained and rinsed
    • 1/2 tsp each salt and pepper
    • 1 Tbsp chopped fresh rosemary
    • 1 tsp crushed red pepper, or to taste
    • 1/4 cup Parmesan cheese


    Instructions


    1. Heat oil in a 2-quart pot over medium heat on camp stove. Add garlic and onion and cook, stirring, until onion is soft and translucent.

    2. Add tomatoes, beans, salt, pepper, rosemary and red pepper and cook until heated through.

      Sprinkle with cheese and serve.

      Serves 4
