Almost Instant Peanut Brittle

"The beauty of brittle is that you can still have dessert no matter how full you are. Grab a small piece if you are stuffed and a larger one if you have room for more. This recipe is prepared totally in the microwave, so it's quick and easy with little cleanup."
List of Ingredients
◦  1 cup raw unsalted peanuts
◦  1 cup sugar
◦  ½ cup light corn syrup
◦  1 teaspoon salt
◦  1 tablespoon butter
◦  1 teaspoon pure vanilla extract
◦  1 teaspoon baking soda
Recipe
Cover a large baking sheet with waxed paper and place on a wire rack.
Place the peanuts, sugar, corn syrup, and salt in a large glass bowl. Mix well. Microwave on high power for 4 minutes, uncovered. Stir well and repeat for another 4 minutes. Stir in the butter and vanilla, blending well. Microwave another 1½ minutes.
Carefully remove the bowl from the microwave and stir in the baking soda, blending well. Pour into the prepared baking sheet. Allow to cool completely at room temperature for at least 1 hour. Break into pieces and store in an airtight container until ready to serve.
Makes about 1 pound
