    Bacon Peanut Brittle

    List of Ingredients


    • 1 cup sugar
    • ½ cup light corn syrup
    • ½ tsp kosher salt
    • 1½ cups dry-roasted peanuts
    • 1 Tbsp butter, cut into small pieces
    • ¾ cup cooked and crumbled bacon slices
    • 1 tsp baking soda
    • 1 tsp vanilla extract


    Instructions


    1. Lightly grease a baking sheet.

    2. Stir together first three ingredients in a 2-quart microwave-safe bowl. Microwave at high 3 minutes or until bubbly and sugar dissolves, stirring after 2 minutes. Stir in peanuts and butter. Microwave at high 4 minutes or until golden brown, stirring every 1 minute.

    3. Stir in bacon, baking soda, and vanilla (mixture will bubble). Immediately pour mixture onto prepared baking sheet, spreading to ¼-inch thickness with a lightly greased spatula. Cool completely (about 30 minutes). Break candy into 1½- to 2-inch pieces.

      Makes 1¼ pounds
