Bacon Peanut Brittle

- 1 cup sugar
- ½ cup light corn syrup
- ½ tsp kosher salt
- 1½ cups dry-roasted peanuts
- 1 Tbsp butter, cut into small pieces
- ¾ cup cooked and crumbled bacon slices
- 1 tsp baking soda
- 1 tsp vanilla extract
Instructions
- Lightly grease a baking sheet.
- Stir together first three ingredients in a 2-quart microwave-safe bowl. Microwave at high 3 minutes or until bubbly and sugar dissolves, stirring after 2 minutes. Stir in peanuts and butter. Microwave at high 4 minutes or until golden brown, stirring every 1 minute.
- Stir in bacon, baking soda, and vanilla (mixture will bubble). Immediately pour mixture onto prepared baking sheet, spreading to ¼-inch thickness with a lightly greased spatula. Cool completely (about 30 minutes). Break candy into 1½- to 2-inch pieces.
Makes 1¼ pounds
