    Chocolate Covered Cherries

    List of Ingredients


    • 60 maraschino cherries
    • 3 Tbsp butter or margarine, softened
    • 3 Tbsp light corn syrup
    • 2 cups sifted powdered sugar
    • 1/4 tsp salt
    • 1 (12-oz.) pkg. milk chocolate chips
    • 1/4 lb. paraffin


    Instructions


    1. Drain cherries thoroughly; place on paper towels to dry.

    2. Combine butter, syrup, and salt. Stir in powdered sugar. Knead until smooth. Chill if too soft. Shape 1 teaspoon of the sugar mixture around each cherry. Place on a waxed paper-lined cookie sheet. Chill.

    3. Melt chocolate and paraffin in double boiler over hot water. Dip cherries into chocolate mixture using toothpicks. Spoon a little chocolate over toothpick hole. Place on cookie sheet until cold.

      Store in a covered container in a cool place for 1 to 2 weeks to ripen.
