Colorful Flavored Lollipops

- Vegetable oil for coating molds
- 2 cups sugar
- 3/4 cup plus 2 Tbsp water
- 2/3 cup light corn syrup
- 1/16 tsp food coloring
- 1/8 tsp flavored oil for candy making (see Note)
Instructions
- Generously brush the insides of the lollipop molds with vegetable oil, place sticks in the molds, and set aside.
- Make the sugar syrup:
Combine the sugar, water and corn syrup in a heavy saucepan over high heat and cook until a candy thermometer reads 250° F. Add the food coloring and continue to cook, without stirring, until the temperature reaches 300° F. Remove from heat and stir in the flavored oil.
- Make the lollipops:
Fill the molds with the hot syrup and let cool completely. Gently remove the hardened candy from the molds, wrap in waxed paper, and store in a cool, dry place for up to 1 month.
Makes about 15 (3-inch) lollipops.
