Dion's Peanut Brittle

- 1¾ cups unsalted skinless peanuts, roasted or raw
- 1½ cups sugar
- ½ cup light corn syrup
- Pinch of salt
- 2 Tbsp (¼ stick) butter, cut into cubes
- 1½ tsp baking soda
Instructions
- Line a rimmed baking sheet with foil.
- In a heavy-bottomed saucepan over medium heat, combine the peanuts, sugar, corn syrup, 2 tablespoons water, and salt. Cook, stirring constantly, for 10 to 15 minutes, until the syrup is a golden tan. Stir in the butter. When this has melted, quickly stir in the baking soda.
- Carefully pour the mixture onto the prepared baking sheet and immediately spread it into a thin layer. Allow the candy to cool at room temperature for 30 to 40 minutes. Break the brittle into pieces and store in an airtight container.
Makes about 1 pound candy.
