    Dion's Peanut Brittle

    List of Ingredients


    • 1¾ cups unsalted skinless peanuts, roasted or raw
    • 1½ cups sugar
    • ½ cup light corn syrup
    • Pinch of salt
    • 2 Tbsp (¼ stick) butter, cut into cubes
    • 1½ tsp baking soda


    Instructions


    1. Line a rimmed baking sheet with foil.

    2. In a heavy-bottomed saucepan over medium heat, combine the peanuts, sugar, corn syrup, 2 tablespoons water, and salt. Cook, stirring constantly, for 10 to 15 minutes, until the syrup is a golden tan. Stir in the butter. When this has melted, quickly stir in the baking soda.

    3. Carefully pour the mixture onto the prepared baking sheet and immediately spread it into a thin layer. Allow the candy to cool at room temperature for 30 to 40 minutes. Break the brittle into pieces and store in an airtight container.

      Makes about 1 pound candy.
