    Golden Citrus Lollipops and Display

    Recipe Introduction

    "Who knew lollipops would be so simple to make and look this gorgeous, too? These lollipops are perfect for displaying at a party, birthday, or wedding. They look beautiful in a wrapped foam block on a dessert table, and I love how they dry clear, showing off the edible gold foil flakes. You're sure to wow your guests with these sweet treats!"

    List of Ingredients

    Lollipops:
    ◦ Plastic lollipop mold with 12 wells (optional)
    ◦ Baking sheet
    ◦ Ice
    ◦ Candy thermometer
    ◦ Pastry brush
    ◦ 1 cups granulated sugar
    ◦ cup light corn syrup
    ◦ cup water
    ◦ 1 teaspoon pure lemon extract
    ◦ Edible gold foil flakes
    ◦ 12 lollipop sticks

    Display:
    ◦ 1 (8 x 4-inch) polystyrene block
    ◦ Scissors
    ◦ Wrapping paper
    ◦ Clear tape

    Recipe

    Place the lollipop mold on a baking sheet. If you do not have a lollipop mold, line a baking sheet with parchment paper and lightly grease it. Create an ice bath by filling a large bowl halfway with ice and water.

    To make the lollipops, attach a candy thermometer to a medium heavy-bottomed saucepan. Add the sugar, corn syrup, and water to the pan and gently stir to mix. With a clean, wet pastry brush, wipe down the inside of the pot to ensure that there are no sugar crystals attached to the sides. Set the heat at medium-high and, without stirring, bring the mixture to 310 F, being careful not to exceed this temperature. This should take around 6 to 8 minutes. When the mixture reaches temperature, remove the saucepan from the heat and partially submerge it in the ice bath for a few seconds to cease the cooking. Remove from the ice bath and add the lemon extract to the saucepan. Gently swirl to incorporate the extract.

    Quickly pour the mixture into the lollipop mold. Sprinkle the gold flakes on top and place a stick in each lollipop. If you are not using a mold to make your lollipops, pour out circles 2 inches in diameter on the prepared baking sheet, leaving space between each circle, and place a stick in each lollipop. Let the lollipops cool completely (about 1 hour) before removing them from the mold or baking sheet.

    Make the display by wrapping the polystyrene block with the wrapping paper and using the tape to secure the edges. Poke the cooled lollipops into the polystyrene block and set out on display.

    Makes 12 lollipops and 1 display






    ❧ Note:
    You don't need to decorate your lollipops with gold foil if it doesn't suit the theme of your party. Have fun and experiment by using sprinkles, edible glitter, or even pressed edible flowers to dress up your lollipops. If you decide to add pressed edible flowers, place them in the cavities of the lollipop mold before you pour in the sugar mixture.
