    Microwave Peanut Brittle

    List of Ingredients


    • 1-1/2 cups raw peanuts, skins on
    • 1 cup sugar
    • 1/2 cup light corn syrup
    • 1/8 tsp salt
    • 1 tsp butter
    • 1 tsp vanilla
    • 1 tsp baking soda


    Instructions


    1. In a 1-1/2-quart microwaveable container, stir together peanuts, sugar, corn syrup and salt. Microwave on HIGH for 4 minutes; remove from oven and stir. Return to oven and microwave on HIGH for 4 more minutes.

    2. Remove from oven; stir in butter and vanilla. Return to oven and microwave on HIGH for 2 more minutes.

    3. Remove from oven; add baking soda and stir until smooth and a medium-brown color. Immediately pour onto a lightly greased baking sheet, marble slab, or foil-lined baking sheet. When cool, break into small pieces. Store in an airtight container.

      Makes about 1 pound.
