Tom's Macadamia Buttercrunch

- 1 cup butter
- 1 cup sugar
- 2 Tbsp water
- 1 cup macadamia nuts
Instructions
- Place butter, sugar, and 2 tablespoons water in a heavy pot and bring to a boil, stirring constantly, and, using a candy thermometer, heat to the hard-crack stage of 290 degrees (F).
- In the meantime, chop the macadamia nuts in a kitchen machine or by hand.
- When the mixture is heated, stir in the chopped nuts and pour into a cookie sheet, spreading to a thin consistency with a spoon or knife.
- As the mixture is cooling, cut into the mix with a meat cleaver, forming lines or a grid of the sizes you want (2"x 2" is good). Let it cool completely and harden, then gently break the pieces at the cut lines. Let set and serve.
Store in dry, sealed container.
Variation: Dip in melted milk chocolate pieces. Let set and serve.
