    Tom Cooper's Macadamia Nut Pralines

    List of Ingredients


    • 2 cups sugar
    • 1 cup buttermilk
    • 1/4 cup molasses
    • 1/4 cup butter
    • 1-1/4 cups small macadamia nut pieces
    • 2 tsp baking soda
    • 1 tsp vanilla


    Instructions


    1. In a heavy saucepan over medium heat, combine sugar, buttermilk, molasses, butter, macadamias and baking soda. Stirring constantly, boil to the soft-ball stage (about 234 degrees on a candy thermometer).

    2. Remove pan from heat and stir in vanilla. Beat until mixture loses its sheen and just starts to set; then quickly spoon out by heaping teaspoons onto wax paper, preferably over a marble surface.

      Makes 20 (2-inch) pieces.
