White Chocolate Truffles

List of Ingredients
- 18 ounces white confectionary coating, cut into pieces *
- 9 Tbsp butter (no substitutes)
- 2 Tbsp whipping cream
- 1/4 cup confectioners' sugar (plus additional confectioners' sugar)
Instructions
- In a microwave or double boiler, melt confectionary coating, butter, and cream over low heat until smooth, stirring frequently. Stir in sugar (if mixture separates, beat with an electric mixer for 30 seconds).
- Pour mixture into an 8-inch square pan. Chill for 20 minutes or until slightly hardened.
- Using a melon baller or spoon, scoop out and shape into 1-inch balls. Roll in confectioners' sugar to coat.
(To store, keep in an airtight container in the refrigerator.)
Makes 5 dozen.
