Spiced Grapefruit

- 5 Texas Red grapefruit
- 2 cups sugar
- 1 cup distilled white vinegar
- 1 tsp whole cloves
- 2 sticks cinnamon
Instructions
- Peel and section grapefruit over a bowl, reserving juice. Pack sections into three sterilized half-pint canning jars. Place jars in a pan with enough hot water to keep jars hot.
- Combine ½ cup juice and remaining ingredients in a saucepan; bring to a boil over high heat, stirring constantly. Reduce heat and simmer for 10 minutes. Strain to remove spices. Pour hot liquid into jars, covering sections completely, leaving ¼-inch headspace. Wipe edges and threads of jar. Place hot canning lids and bands on jars; screw on firmly.
- Process in boiling water for 5 minutes. Remove from canner and place on a towel or rack to cool. Store in a cool, dark place until ready to use. Refrigerate overnight before using. Refrigerate after opening.
Makes three ½-pint jars.
