Tart Cherries in Ginger Syrup

â—¦ 6 cups water
â—¦ 2 cups sugar
â—¦ 1 cup â…›-inch-thick peeled fresh ginger slices
â—¦ 2 ½ pounds tart cherries, pitted
Recipe
Bring first three ingredients to a boil in a 6-quart stainless steel or enameled Dutch oven; reduce heat, and simmer, uncovered, 1 hour or until syrupy. Transfer ginger slices to a bowl, using slotted spoon. Remaining syrup should measure 3 cups.
Add cherries to syrup. Bring to a simmer; cook 5 minutes or until thoroughly heated. Ladle hot cherries and syrup into a hot jar, adding several slices of reserved ginger and leaving ½ inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar. Apply band, and adjust to fingertip-tight. Place jar in boiling-water canner. Repeat until all jars are filled.
Process jars 10 minutes, adjusting for altitude. Turn off heat; remove lid, and let jars stand 5 minutes. Remove jars and cool.
Makes about four 1-pint jars
