    Chicken French Onion Casserole

    List of Ingredients


    • 2 whole broiler-fryer chicken breasts, halved, skinned
    • 4 broiler-fryer chicken thighs, skinned
    • 1/4 cup Mazola corn oil
    • 4 medium onions, sliced
    • 1 Tbsp flour
    • 1 tsp Accent flavor enhancer
    • 1/2 tsp salt
    • Pinch of pepper
    • 3/4 cup chicken bouillon
    • 1/4 cup dry sherry
    • 1 cup plain croutons
    • 1/4 cup grated Swiss cheese
    • 1/4 cup grated Parmesan cheese
    • 1 Tbsp butter, melted


    Instructions


    1. Heat corn oil in frying pan over medium heat. Add chicken and brown on all sides. Remove chicken to casserole.

    2. Add onions to frying pan in remaining oil and stir-fry about 2 minutes. Mix together flour, flavor enhancer, salt and pepper; add to onion. Add bouillon and sherry; stir. Pour over chicken.

    3. Cover and bake in a 350-degree oven for about 1 hour or until fork can be inserted with ease. Uncover. Toss croutons with Swiss and Parmesan cheese and melted butter. Spread over chicken. Place under broiler just until cheese melts. Serve immediately.

      Makes 6 servings.
